Toulouse sausage & white beans, Dijon gravy

A side dish I lured by the mighty cassoulet that’s near to my heart from having cooked many a cassoulet in the kitchens of French bistros.  Our version of the classic southwest French dish is composed of slow cooked white beans, house cured pork belly and Toulouse sausage, caramelized onions.
